Easy to prepare and a real crowd pleaser. Plate individually for a first course or go family style, with a huge bowl of shrimp and enjoy during appetizer hour!

- 6-8 cups of water
- a few onion skins
- 1/2 lemon leftover from cocktail sauce
- 1 teaspoon whole peppercorn
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon coriander seeds or powder
- pinch of cayenne powder
- 1 bay leaf
- a few celery leaves
- 1 pound raw shrimp prefer Argentinian colossal

- In a large pot, place all the ingredients and bring to a low boil for 5 minutes. Add in the shrimp and cook for 2-3 minutes till firm. Remove the shrimp and place on a tray to cool.
- In the meantime, make the sauce! SEE NOTES.
COCKTAIL SAUCE - ½ cup ketchup zest and juice from ½ a lemon (see above) + a few dashes of hot sauce + a few dashes of Worcestershire sauce + 2 tablespoons horseradish sauce (or to taste) + 1 tablespoon dill, finely chopped + 1 green onion, chopped Mix everything in a bowl. Taste and adjust seasonings.
