1 cup quinoa
¼ cup toasted pine nuts
1 tablespoon sunflower oil
½ cup onion, finely chopped
½ cup apples, finely chopped
2 garlic cloves, finely chopped
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon turmeric
2 cups chicken broth
½ cup chopped fresh chives

Rinse quinoa under cold water until water runs clear. Set aside.

In a medium pot over medium low heat quickly toast the pine nuts till golden. Set aside. In the same pot, over medium heat, add the oil and sauté onion, apple and garlic till soft and golden. About 10 minutes

Add salt, pepper, turmeric and quinoa and stir for another minute. Add broth, cover, bring to boil and then simmer for about 20 minutes till tender and broth is absorbed.

Place in bowl and toss with fresh chives and pine nuts.
